Handcrafted in small batches to our family recipe, Cashel Blue has become a modern classic. Celebrated for its taste-it's Ireland's Queen of the Blues. In 1984, our co-founder Jane created this taste sensation in our farmhouse kitchen. Today, each batch is handcrafted, matured and graded by second generation cheesemakers. Only from our dairy on our farm in Tipperary. Cashel Blue is celebrated internationally and esteemed by chefs and food lovers. It has become a modern classic.
